Pumpkin Cranberry Bread

My mom makes this every year as a Christmas gift to our neighbors and they really do like it! :D This stuff is delicious.  I love to eat this for breakfast as well...cold! :P

Ingredients/Instructions

2 1/4 cups flour

1 tablespoon pumpkin pie spice

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs beaten

2 cups granulated sugar

1 cup Libby's solid pack pumpkin

1/2 cup vegetable oil

1 cup jellied or whole cranberries

In a large bowl, combine flour, pumpkin spice, baking soda and salt.  In a small mixer bowl, beat eggs; beat in sugar, oil and pumpkin. Pour pumpkin mixture into dry ingredients; stir just until moistened.  Stir in cranberries. Spoon batter into 2 greased and floured 8X4-inch loaf pans.  

Bake in pre-heated 350 degree oven for 60 minutes or until wooden toothpick comes out clean.  Cool for 5 to 10 minutes; remove from pans.
