Apple Pancakes

Oh my gosh this is scrumptious! :D  I love having this on a cold winter morning.  The smell is pure heaven :)

Ingredients/Instructions

2 cups Bisquick or Krusteaz's

1 1/2 cups skim milk

1 egg

2 tablespoons sugar

1 teaspoon vanilla

1 teaspoon cinnamon

one-half of an apple (red) finely chopped

Stir all ingredients until blinded.  Pour batter to desired width of pancake into heated pan.  
Cook until bubbles break the surface.  Turn; cook until golden.  To keep warm, place in single layer on cookie sheet. Cover with aluminum foil, and place in 200 degree oven up to 10 minutes.

 

Cider Syrup

1 cup sugar

2 tablespoons fresh lemon juice

3 tablespoons Bisquick or Krusteaz's

1 teaspoon cinnamon

2 cups apple cider

1/4 cup butter or margerine

Combine sugar, Bisquck-Krusteaz's and cinnamon in a saucepan. Stir in cider and lemon juice.  Cook while stirring constantly until boiling.  Remove from heat and add butter and stir.  Serve over pancakes.
